  1. PAR COOK & ROAST…Place potatoes in a small pot of water and cover completely. Bring to a boil then immediately drain and set aside. While the potatoes cook, heat oven to 400, season and roast broccoli for 10mins until tender and slightly browned. Add potatoes and continue to roast for 10mins more.
  2. SPLIT & SEAR STEAK…Preheat a nonstick pan over medium high heat, Slice steak in half and season with salt & pepper. Add oil and sear each side for 3 minutes until desired doneness. Set meat aside and add pesto plus a few tablespoons of water to give sauce like consistency. Transfer to final plates to keep warm.
  3. SCRAMBLE EGGS & MIX RSTD VEG…in the same nonstick pan over medium low heat, add oil/butter and season with salt & pepper. Stir at least once a minute until eggs are cooked. About 5 minutes. Mix in cheese, roasted veggies and smoked paprika.
  4. PLATE…heat tortillas until warm. Divide 3 tortillas (double-lined) between each plate and spoon egg mixture to fill. Serve alongside steak with pesto
  5. Ready to serve and ENJOY!
