  1. Make ready 5 Baking potatoes, peeled & cut into medium sized chunks. (I leave the skin on mine)
  2. Get 1/3 cup Olive or vegetable oil
  3. Prepare 1 packages Taco seasoning
  4. Make ready 1 Sprinkle of seasoned salt
  5. Make ready 1 Sprinkle of black pepper
  6. Take 2 cup Shredded cheese of choice. (Original recipe uses Monterrey Jack/Cheddar blend)
Instructions to make Cheesy Taco Taters:
  1. Place potatoes in a gallon size ziploc bag with oil and taco seasoning. Seal & shake until everything is well coated.
  2. Spray a 9x13 dish (or any dish big enough to spread them out in) with non stick cooking spray and spread the potatoes out in it.
  3. Sprinkle with a little seasoned salt and black pepper.
  4. Place in a 400°F oven for 40 minutes. At 20 minutes, stir them around to turn and get browned on all sides.
  5. Sprinkle with cheese about 10 minutes before the end of cooking time.
  6. Ready to serve and ENJOY!
