- Take 150 g Sweet Potato
- Take 140 g Lean Beef Mince
- Make ready 1/2 red pepper

- Get 30 g Light Cheddar Cheese

- Take Low cal spray
Instructions to make Taco Fries:
- Chop sweet potato into chips and place on an oven tray with salt and pepper. Cook for 20-25 Mins at 225°C
- Heat pan with low cal spray and sautée onions and garlic cloves. Add mince and cook until brown. Add peppers. Add your spices. Stir in tinned tomatoes, purée, kidney beans and beef stock and allow to simmer.
- Taco Sauce. Mix together 30g lighter than light mayo, 1 tbsp tomato purée, 1/2 tsp chilli, 1 tsp garlic powder
- Top your fries with the mince mix. Add your taco sauce. Sprinkle with cheese and voilà.
- Ready to serve and ENJOY!
