In an oven-safe skillet, heat oil over medium-high heat. Add the turkey and cook, breaking it up with a spoon, until it is no longer pink.   6. Reduce heat to low, cover and cook 30-40 minutes until quinoa is cooked and translucent.
  7. Cover with cheese, sprinkle the cilantro, turn the heat off, and cover until melted. Plate with a dollop of sour cream.
