  1. place chicken in crock pot
  2. poor tomatos and salsa over top.
  3. set to high and let cook for several hours until chicken is falling apart. About 5 hours.
  4. Finely shred the chicken with the tomato mixture into a large bowl. Drain chicken tomato broth into a separate container for later use.
  5. In a large saute Pan, warm enchiladas sauce.
  6. Spray down a Large rectangle baking dish with cooking spray. pre heat the oven to 350.
  7. Dunk and coat a Tortilla in the Enchiladas Sauce and place on one side of the baking dish.
  8. In the center add chicken, beans, chilies, olives, and cheese. Fold inward and roll into burrito shape. Repeat until pan is full.
  9. Once assembly is complete drizzle left over Enchilada Sauce and left over tomato broth over the top until they are drenched. Then cover them with cheese.
  10. bake for 15 to 20 minutes (cheese should be melted and sauce should be bubbling)
  11. let cool and then serve and enjoy!
  12. Ready to serve and ENJOY!
