The ingredients needed to make Fiesta Chicken:
  1. Prepare 1.5 lbs chicken breast
  2. Make ready 16 oz jar of salsa
  3. Take 2 cloves minced garlic
  4. Prepare 15 oz can of black beans
  5. Prepare 1/2 lb bag of frozen corn
  6. Take 6 cups cooked rice
  7. Prepare 1 package taco seasoning
  8. Make ready 1 package shredded cheese (optional)
Steps to make Fiesta Chicken:
  1. Place chicken breasts in bottom of 5 qt crockpot. Drain black beans and add them to pot with corn and salsa. Pour in 1/4 cup of water and taco seasoning.
  2. Stir ingredients until distributed evenly. Put lid on crockpot and cook on low for 8 hours or on high for 4 hours.
  3. Cook rice. Remove chicken from crockpot and shred. Return shredded chicken to crock pot and stir.
  4. Either add cooked rice to chicken mixture or layer chicken on top of the rice. Add cheese if wanted.
  5. Ready to serve and ENJOY!
