  1. Make ready 2 lbs ground meat
  2. Take Taco seasoning
  3. Get Flour tortillas
  4. Make ready 1 (28 oz) can enchilada sauce
  5. Prepare 1 can refried beans
  6. Prepare 14-16 oz shredded Mexican cheese
Instructions to make Enchilada Casserole:
  1. Brown ground meat, drain grease and add taco seasoning
  2. Halve some of the tortillas to fit a 9x12 baking dish
  3. Spray baking dish with a little nonstick spray, add first layer of tortillas, then spoon some enchilada sauce over them
  4. Put half the taco meat over sauce, then half the refried beans and some of the shredded cheese
  5. Repeat again for the second layer, finishing with tortillas, sauce and cheese on top
  6. Bake in a 325deg oven for about 40 minutes, cover with foil if the top starts to dry out
  7. Serve with sour cream and avocado
  8. Ready to serve and ENJOY!
