Instructions to make Enchilada Casserole:
  1. Preheat oven to 375 degrees. Cook hamburger along with seasonings of choice until browned; drain and return to pan.
  2. Open all cans. Add the enchilada sauce, corn, green chilies and pinto beans to the hamburger. Mix to combine.
  3. Spray 9x13 baking dish with cooking spray. Put half of the meat mixture into bottom and spread out evenly.
  4. Top with 1 cup of cheese.
  5. Top with half the bag of fritos.
  6. Repeat once more with remaining meat, cheese and fritos.
  7. Bake for 20 to 30 minutes or until hot and bubbly. Enjoy with your favorite toppings!
  8. NOTE: If you want a creamier version, add 1/2 package of cream cheese when adding canned ingredients to meat mixture. Heat through until melted.
