  1. Make ready 12 oz cubed ham, fully cooked
  2. Make ready 2 tbsp chopped parsley
  3. Make ready 3 tsp prepared mustard
  4. Get 1 cup shredded cheddar cheese
  5. Get 1 1/4 cup gluten-free biscuit mix
  6. Take 1 eggs
  7. Take 1 tsp salt
  8. Get 1 1/2 cup soy milk
Instructions to make Ham Tacos:
  1. Mix ham, parsley, mustard, & cheese together. Set aside.
  2. Beat biscuit mix, egg, salt& milk together until smooth.
  3. For each pancake, pour 1/4 cup batter onto griddle. Cook until edges are dry around edges. Turn over. Cook other side til golden brown.
  4. Heat oven to 350°F.
  5. Fold & fill each pancake with 1/4 cup mixture. Arrange upright in ungreased baking dish. Sprinkle with extra cheese, if desired.
  6. Bake until filling is hot & cheese is melted, about 10 minutes. Makes approximately 12 tacos.
  7. Ready to serve and ENJOY!
