The ingredients needed to make Zab’s Carnitas:
  1. Prepare 1 bone in pork shoulder or butt (4-5 lbs)
  2. Make ready 4 cups chicken stock or broth
  3. Make ready 1 large onion- quartered
  4. Get 1 tbs coriander seeds
  5. Make ready 1 tbs cumin seeds
  6. Make ready 1 tsp dry oregano
  7. Make ready 3 canned chipotle chilies in adobo sauce (optional)

  9. Prepare 1 cup brown sugar
Instructions to make Zab’s Carnitas:
  1. Place pork, broth, onion, coriander, cumin, oregano, chilies and bay leaves in 5-6 quart pan.
  2. Add enough water to just cover the meat.
  3. Cover pan and bring to boil.
  4. Reduce heat and simmer until meat pulls apart easily with fork (3-4 hours)
  5. Lift meat out and lightly shred. You can discard the juices.
  6. Preheat oven to 450
  7. Place shredded meat in roasting pan
  8. Sprinkle with brown sugar
  9. Baked uncovered at 450 until slightly crunchy and sizzling (about 20 minutes)
  10. Ready to serve and ENJOY!
