Instructions to make Pork Carnitas Tacos:
  1. Wash and dry all produce. Halve and peel onion, thinly slice one half and finely chop the other half. Core and slice poblano pepper into 1/2 inch pieces. Chop cilantro, dice tomato, and halve lime.
  2. In medium bowl, combine sliced onion, vinegar, sugar, a pinch of salt, and 1 tbsp water, stir until sugar is dissolved and set aside.
  3. Heat drizzle of olive oil in large pan over medium-high heat. Add pork and season with salt and pepper. Cook until browned and cooked through, breaking up meat into small pieces, (4-6 minutes). Set aside
  4. Heat another drizzle of oil in same pan over medium-high heat, add poblano and chopped onion, season with salt and pepper. Cook until pepper is softened, 3-4 minutes. Return pork to pan with fajita spice, stock concentrate, half of the tomato paste, and a drizzle of water. Cook for another 1-2 minutes
  5. While filling cooks, mix sour cream, a squeeze of lime juice, and a pinch of chipotle powder to a small bowl. Add water a drizzle at a time, until it reaches drizzling consistency. Wrap tortillas in damp paper towel and microwave for 30 seconds to 1 minute
  6. Divide tortillas between 2 plates, top with pork filling, tomato, monterey jack, cilantro, and pickled onions from step 2. Drizzle crema, and enjoy!
