  1. Brown beef. Add in Onion and zucchini and cook until soft.
  2. Stir in taco seasoning.
  3. Add corn, tomatoes and beans.
  4. Spray 2 pans, spoon 2 C rice into the bottom of each pan. Spoon the meat mixture over the rice. Top with shredded cheese.
  5. If you want to eat right away: bake covered at 350 for 25 min.
  6. If freeze: let thaw overnight in fridge. Bake at 350 for 45 min covered. Then remove foil and cook until top is nice and brown.
  7. Ready to serve and ENJOY!
